Botanical name: Citrus australasica
The Australian bush is bursting with a plethora of incredible flavours that are similar to traditional ingredients.
Fruits like the Finger Lime have been utilised as bush tucker by the indigenous inhabitants for thousands of years and are now much sought-after ingredients. Finger Lime trees grow in rainforests in NSW and Queensland and now due to popular demand are being cultivated in boutique plantations in sub-tropical coastal NSW and Queensland.
With its zesty, sweet and sour flavour, this native lime looks like a regular lime rolled into a sausage shape, as the name suggests, is barely the size of a little finger. Yet this unusual citrus (whose skin colour ranges from emerald green, to purple, crimson and black) is a nutritional giant, packed with folate, potassium and Vitamin E.
Unlike regular limes, the inside of a Finger Lime is packed with tiny translucent caviar-like pearls, and when popped, each one releases a delicious splash of tangy flavour. This has earned the fruit the nickname “citrus caviar or native caviar”.
Our Finger Lime powder is freeze-dried to preserve the flavour and nutritional value.
With its lightly bittersweet taste, Finger Lime can be used in place of lemons or limes in virtually any recipe, especially seafood dishes like grilled fish, prawns and oysters or scallops with vinaigrette. It works especially well in cocktails and other beverages.
Australian Ingredient: Freeze-dried Finger Lime powder.
