Madras Curry Powder has a noticeable sting in its tail as compared to the well-known yellow Curry powder, commonly found on commercial store shelves. Although both are arguably British creations (either first created by or for Brits in India who adapted traditional recipes to their tastes or returned Brits who brought back trunkloads of valuable spices!), they still possess an unmistakably Indian character. This spice mix was after all named to celebrate a South Indian city, the capital of Tamil Nadu (now known as Chennai).

 

Spice Zen’s Madras Curry Powder – Hot is an earthy, aromatic versatile spice mix of 17 premium quality organic spices that perfectly balance the heat and intense flavour to honour the South Indian cuisine. The spice blend is made with traditional hand roasting and stone grinding technique, which work to imbibe the freshness, flavour and essential oils. The spice mix is sealed in amber jars to retain the activated nutrients.

 

Madras Curry Powder spice mix has many ingredients in common with the Curry powder. What stands it apart is the heat, its chilli content, lending it a darker, redder hue and the aromatic, citrusy curry leaves, typical of the authentic South Indian cooking.

 

Recipes for Madras Curry with red meat, fish, chicken or vegetables are the go-to when using this blend. If you’re a big chilli fan, swap in Madras Curry Powder in recipes that call for regular Curry Powder for a hot curry. Or use it with coconut milk to make Sri Lankan curries. However, milder curries such as Korma tend to get overpowered. Using a smaller amount of the blend will continue to give a good flavour while reducing the heat.

 

Like other spice blends, you can experiment by adding this punchy seasoning to soups, rice and dal. Use it as a dry rub on barbecued meats and vegetables or mix it into raita (yoghurt sauce) or mayonnaise for a condiment that’s tongue-tingling and cooling in one.

    Came across these bold spices at the Easter Show in 2023. No other supplementary spices needed. A couple of tablespoons and your curry sings. Love it.
