The Cajun people of New Orleans and greater Louisiana trace their ancestry back to the Acadians, French-speaking colonists who settled in mainly rural parts of the region after being exiled from Canada by the British. The Cajun brought rich European cultural influences to the American south, including classic French recipes and cooking styles. These were adapted over time to suit cooking local produce such as river catfish, saltwater fish and seafood (especially prawns and crawfish) and game meat.
The Cajun Seasoning can also be used to cook Creole food, which is more akin to city food in Louisiana. This food is characterised by the use of tomato based sauce and more sophistication of the European heritage.
