Cloves are the dried buds of the flower of a tropical evergreen tree. They are picked when they begin to turn red at the base and are dried in the sun. Cloves are indigenous to Asian countries like Indonesia, India, Pakistan, and even areas of East Africa. It is native to the Maluku islands in Indonesia.

Clove is used in Asian cuisine in sweet spice blends for cakes and fruit to pickles, preserved meats and curries. Clove is a pungent spice with a strong ‘antiseptic’ note.

Clove, like many other spices originating in Asia, has a great history. It was transported from Indonesia to China, India, Persia, Africa and Europe during the 13th and 14th centuries. Wars began for monopoly over clove production and distribution, especially for control over the Maluku islands, as Clove was expensive at this time. The Dutch emerged victorious and controlled the Maluku islands for a very long time. Clove is a very important commercial crop in many parts of the world today.

Clove is an aromatic spice and often used in conjunction with other aromatics like Cinnamon, Bay Leaf, Cardamom, Star Anise, etc.
