Rustic Greek Lamb Parcel - Recipe

- 500 grams lamb rump (cut into thick strips) or deboned leg of lamb
- 2 tablespoons + 1 tsp Spice Zen’s Organic Greek Lamb Seasoning (adjust to your taste)
- 400 grams of vegetables of your choice – potatoes, celery, carrots, zucchini
- 2 tablespoons Spice Zen’s Organic, cold pressed Sunflower oil (or Olive oil)
- Zest of 1 lime (optional)
- Salt and pepper to taste
- Grease-proof/ parchment paper
- Place the beautiful portion of deboned lamb in a large bowl and rub the Spice Zen's Greek Lamb Seasoning onto it generously. Allow it to marinate for at least one hour.
- Dice all the vegetables into medium-sized cuts.
- Heat a pan over medium heat with 2 tablespoon oil. Toss the diced vegetables in it along with 1 tsp of Spice Zen's Greek Lamb Seasoning. Season to taste.
- Arrange the vegetables on one side of a large rectangular grease-proof paper. Place the lamb on top of the vegetables with lime zest. Fold the paper over these ingredients and make a square. Fold the edges together with a series of small folds. Twist the folds to create an air-tight parcel.
- Preheat the oven to 180 degrees Celsius. Place this parcel onto a roasting pan and cook at 180°C (for fan forced ) oven for 1-1.5 hours. Remove the lamb from the oven and let it sit for 15minutes.
- Pull the lamb apart and serve it with salad or Greek rice. Enjoy!
