Green Cardamom belongs to the Zingiberaceae family which also includes Turmeric, Galangal and Ginger. It is native to India and Sri Lanka. Green Cardamom Pod has approximately 10 to 12 tiny dark-brown seeds inside. It has rich and complex flavour – slightly sweet, exotic, floral and spicy with citrus undertones and a strong pungent aroma. Green Cardamom is popular in Indian, Middle Eastern and Scandinavian cooking.
Green Cardamom enhances both savoury and sweet flavours and compliments both meat and vegetables. Use the seeds or grind them as needed to release fresh taste and flavour. Green Cardamom seeds are used in recipes where outer pods are undesirable and are convenient if you want to grind Cardamom yourself just before cooking.
Cardamom seeds are used as savoury flavouring in casseroles, chicken, curries, pastries, pâtés, pies, purées, rice, sauces, soups, stews and with meats, seafood and vegetables. For sweet flavouring it is used in apple pie, custard, ice cream, rice pudding or sprinkle them over a fresh fruit salad. Cardamom can also be added to beverages for aromatic fragrance. Green Cardamom pairs well with apples, oranges, pears, sweet potatoes.
For a warm cup of aromatic coffee, grind up 3 to 4 whole Cardamom Seeds along with your coffee beans and prepare your coffee as usual.
