Ginger root is from the family Zingiberaceae and is closely related to Galangal, Turmeric and Cardamom. Ginger roots are a modified underground storage stem called a rhizome and the colour varies from pale yellow to white or pink depending on the variety and age. Ginger is native to Asia and has been highly regarded for centuries as a spice in traditional Indian, South East Asian and African cuisines.

Dried Ginger has a characteristic warm, slightly sweet, hot and peppery flavour with lemon undertones and pungent aroma. The flavours are concentrated in the dried form.

Ginger Cuts can be used in clear soups, marinades, teas, drinks and cocktails (hibiscus coolers or ginger lemonade), tinctures and infused oils where the flavour is to be infused and Ginger Cuts removed before serving. Ginger Cuts are best for pulverizing and baking.

Ginger combines well with Cumin, Coriander, Garlic, Mustard Seed and Turmeric in savory dishes. In sweet dishes, Dried Ginger is a classic combination with Cinnamon and Cloves.
