Cayenne Pepper is a finely ground powder prepared from the seeds and pods of various types of chilies. Mature Cayenne plants produce more than 40 fruit pods which ripen on the plant to bright red pods. The harvested pods are sun-dried and sold as whole pods or ground pepper. It has a reddish orange colour and is hot, pungent and biting in taste but not as potent as some of the other hotter chilies. Cayenne Pepper can be used as a cooking spice or sprinkled as a garnish.
Cayenne Pepper is indigenous to the Cayenne region of French Guinea. It is now grown in the tropical and sub-tropical regions of India, West Africa, USA and Mexico.
Cayenne Pepper is used to impart heat and enhance other flavours in a dish. Cayenne Pepper come in a very wide variety of heat ranges -- with the most typical being 30,000 - 35,000 SHU (Scoville Heat Unit) although 60,000 SHU, 90,000 SHU and 120,000 SHU can also be found.
Cayenne Pepper is very versatile and goes well in many dishes and a wide range of ingredients such as cheese, corn, eggplant, onion, peppers, potatoes, rice, seafood such as crab, crayfish, lobster, fried mussels, oysters, sardines, scallops, shrimp, smoked salmon and trout and fried, grilled, roasted or stewed meats. It can be sprinkled on bacon prior to frying and used in the dusting flour for fried chicken, fish and vegetables. It adds piquancy to barbecue sauce, biscuits, casseroles, chili, chutneys, curries, egg dishes (especially omelettes and soufflés), ketchup, marinades, pickles, rice, salads and smoked foods. It is an ingredient of Worcestershire sauce and is frequently used in curries.
*Scoville Heat Unit is the measure of heat in the chilli. It can range from 100 in Bell Peppers to 1 million (in Ghost) and above. Medium Hot is a Spice Zen classification.
