Black Mustard Seed has a pungent, earthy and spicy flavour. It is a versatile spice that is used in many dishes for flavour and appearance. It is fried in oil, during Indian cooking, as heat makes the seed sweet and mild while releasing its nutty flavour.  In the West, it is traditionally used to make condiments such as Dijon Mustard and whole seed deli mustards.

Mustard seed, part of the Canola family, is also used to produce cold pressed cooking oil. Mustard seed oil is a favoured cooking medium in the upper reaches of the Himalayas as it has a very low freezing point and gives warmth in the body.

Black Mustard Seed is used in pickles, curries, lentil soups, stir fries, roasted vegetables, meat, fish and sautéed potato dishes. It is regarded as a hot spice and a key ingredient in spice blends. When cooked in a liquid, the mustard seed flavour becomes stronger without the spiciness.

Black Mustard Seed works well with Cumin, Asafoetida, Coriander, Fennel, and Curry Leaves.
