The whole Caraway Seed is freshly stoneground, on receipt of your order, which brings out an intense, peppermint aroma. Stoneground spices have a naturally uneven, earthy texture that adds a rustic mouth feel. This is immediately packed in a recyclable, amber coloured, glass jar, with an airtight induction seal, to maximise freshness of the product – you will get a strong, sweet aroma of fresh ground Caraway Seed when you open the jar.
Caraway Seeds are the split dried fruits of a biennial plant of the Apiaceae family and is indigenous to the Mediterranean, Northern Africa and Central Europe. Caraway is a key ingredient in Indian, Dutch, English, German, North African, Russian, and Scandinavian cooking. Stoneground Caraway has a distinctive Peppermint like pleasant, sharp, nutty, earthy taste with warm, sweet flavours of anise, citrus and peppery undertones. Ground Caraway blends smoothly in sauces and bread dough.
Stoneground Caraway is used to flavour apple dishes, breads (rye, Irish soda and pumpernickel), biscuits, cakes, cheeses, coleslaw, comfits, crackers, curries, goulash, harissa paste, herb butters, liqueurs (kummel, schnapps and aquavit), meat dishes, noodle dishes, pickles, pork dishes, salad, sauerkraut, sausages, stews and teas. It counteracts the fatty richness of cheeses, duck, goose and pork and works well with apples, cabbage and potatoes. Stoneground Caraway should be added towards the end of the cooking process.
Stoneground Caraway works well in combination with Coriander, Garlic and Parsley.
