A staple in the South Indian and Sri Lankan kitchen, where it is often made from scratch according to old family recipes, Sambar Masala (masala means ‘spice blend’) has a peppery kick and a warm, but not overpowering chilli heat, typical of tropical Subcontinental cuisine. Sambar is also the name of a typical South Indian stew, usually made with lentils, tomato and mixed vegetables (such as okra, eggplant, pumpkin, green beans, carrots and zucchini).


Spice Zen’s Sambar Spice Blend is a complex spice mix, made with coriander and fenugreek seed, amchur (dried mango powder) and dried curry leaves that lend sambar stew its signature hot and sour taste and complex, aromatic scent.


Sambhar is often served as a side dish with South Indian dishes such as dosa and idli or offered as a flavourful accompaniment for chapati and rice. Sambar is a versatile spice blend, useable as a universal curry powder to flavour all kinds of curries, or as a dry seasoning for fried fish and seafood.


Sambar powder has a coarse texture and can be identified by the appearance of whole black mustard seeds. Mustard seed is left unground for this blend - the whole seeds crackle, pop and release a pungent, earthy fragrance when fried, and gives the dish a satisfying crunch.
