Bush Tomato Seasoning

This dried and coarsely hand blended seasoning consists mainly of the savoury akudjura (ground bush tomato), a small fruit closely related to tomatoes and eggplants that both grows wild and is cultivated in the more arid regions of Australia.

 

This Australian tomato has a dark and slightly sour taste, not unlike the sun-dried version of their better-known cousins but can be distinguished by its mild heat and a rather unique, surprisingly notable lightly caramelised flavour. When dried akudjura fruit are eaten on their own, the upfront caramel, tamarillo and sweet flavour, soon turns to a sour-tangy tomato flavour with a slightly piquant pungent aftertaste.

 

The native tomato was an important nutritional source for indigenous Australians in desert regions. Their thousands-of-years-old history with humans and earthy, crimson colour naturally symbolises the cuisine of the Australian Red Centre.

 

Spice Zen’s Bush Tomato Seasoning is spiked with the complementary addition of native Mountain Pepperberry and Saltbush, along with basil, garlic and tomato powder which balance out the natural bitterness of bush tomato and impart a beautiful red hue and a spicy Cajun style flavour to a variety of dishes. This blend can be used in almost any recipe calling for a dash of spicy sauce or tomato, Cajun- seasoning or with cheese or eggs.

 

Sprinkle it straight on to pizza, pasta, sauces, seafood, veggies or casseroles or use like dukkha as a crunchy, flavoursome crust for meats and baked breads.
