This dried and coarsely hand blended seasoning consists mainly of the savoury akudjura (ground bush tomato), a small fruit closely related to tomatoes and eggplants that both grows wild and is cultivated in the more arid regions of Australia.
This Australian tomato has a dark and slightly sour taste, not unlike the sun-dried version of their better-known cousins but can be distinguished by its mild heat and a rather unique, surprisingly notable lightly caramelised flavour. When dried akudjura fruit are eaten on their own, the upfront caramel, tamarillo and sweet flavour, soon turns to a sour-tangy tomato flavour with a slightly piquant pungent aftertaste.
The native tomato was an important nutritional source for indigenous Australians in desert regions. Their thousands-of-years-old history with humans and earthy, crimson colour naturally symbolises the cuisine of the Australian Red Centre.
Spice Zen’s Bush Tomato Seasoning is spiked with the complementary addition of native Mountain Pepperberry and Saltbush, along with basil, garlic and tomato powder which balance out the natural bitterness of bush tomato and impart a beautiful red hue and a spicy Cajun style flavour to a variety of dishes. This blend can be used in almost any recipe calling for a dash of spicy sauce or tomato, Cajun- seasoning or with cheese or eggs.
Sprinkle it straight on to pizza, pasta, sauces, seafood, veggies or casseroles or use like dukkha as a crunchy, flavoursome crust for meats and baked breads.
Ingredients: Bush Tomato powder, certified organic Tomato powder, Mountain Pepperberry, certified organic Garlic, Old Man’s Saltbush and certified organic Basil.
No added preservatives, flavourings, fillers, dairy, flour, gluten, nuts, salt, sugar, onion

My partner and I love this spice. It’s our special ingredient in so many dishes. I could not recommend it enough.

Bush Tomato Seasoning
I looked high and low for bush tomato powder and here it is! Reliably gluten free is a must have. This has such a full flavour. Research tells me that bush tomato has a higher iron content that even the kangaroo meat we use with it. Now use the bush tomato with all red meat dishes. Yum.

Bush Tomato Seasoning
This blend has a hearty flavour with a good balance between sweet and savoury. Great to sprinkle on meat, vegetables, eggs or avocado.
