Spice Zen’s white rice couscous is a certified organic gluten free couscous made 100% from rice. It is suitable for people with gluten intolerance or coeliac disease. This product is certified organic by ACO and endorsed by Coeliac Australia.
Simple, humble, light and fluffy couscous dish with origin from North Africa, is made from tiny steamed balls of semolina. A kitchen staple in Algeria, Morocco, Tunisia, the Middle East and the Mediterranean region, Couscous is a national and celebratory dish in Morocco served under a meat or vegetable stew.
Couscous is the husked and crushed semolina (the hard part of the grain that resists milling). It is usually made with durum wheat. The traditional technique for couscous dish involved steaming the crushed couscous grain multiple times in a tall pot called a couscousière, fluffing it by hand till it was light and fluffy. However, commercially available couscous is usually steamed with flour and water and then dried and are instant and fast cooking couscous.
Like authentic traditional couscous, gluten free couscousis made by crushing rice grains that are lightly parboiled. It is a unique smart product that combines the authenticity of traditional couscous and the convenience of ‘instant couscous’.
The gluten free couscous can be cooked as a savoury or sweet dish for any time of the day - for breakfast, lunch, dinner, a healthy snack or lip-smacking dessert. You can cook it in a microwave, on a stovetop or in a couscousière.
Microwave method: For ¼ cup rice couscous, add 1 teaspoon oil, ghee, or butter. Mix it in a bowl and then add ½ cup of boiling water. Microwave it for 1 minute, cover it and let it sit for 10 minutes. Fluff it up with a fork.
Stove Top method: For ¼ cup rice couscous, add 1 teaspoon oil, ghee, or butter. Mix it in a pot and then add ½ cup of boiling water. Heat it over medium heat for 1 minute, cover it and let it sit for 10 minutes. Fluff it up with a fork.
Serve gluten free white rice couscous with stewed meat or vegetables, Tagine of Chicken, Lamb or mutton, preserved lemon and olives or chunky onion Harissa sauce. Add toasted almonds, raisins, peas, chickpeas, dried fruits or compote of fruits. Add cooked gluten free couscous to the salads after chilling it. Sweetened rice couscous with bananas, almonds, raisins, milk, honey, cinnamon, and nutmeg is great for breakfast.
