This whole snapper is pan roasted to highlight its natural sweetness, gently infused with garlic, bay leaves and the bright lift of Spice Zen Aussie Lemon Pepper. A quick sear builds depth and texture before the fish finishes in the oven, developing beautifully crisp skin, succulent flesh and aromatic pan juices. A final squeeze of fresh lemon brings clarity and balance, resulting in an elegant, quietly sophisticated dish that lets exceptional ingredients shine.

1. Preheat the oven to 200°C fan-forced (or 220°C conventional). Pat the fish dry inside and out.
Rub the snapper with 2 tablespoons oil, season lightly with Aussie Lemon Pepper and sea salt, including inside the cavity.
Heat a large ovenproof pan over high heat. Add the remaining ½ tablespoon oil and place the fish in the pan. Sear for 2 minutes per side until lightly golden.
4. Add the garlic and bay leaves to the pan and cook for 1 minute until fragrant.
Transfer the pan to the oven and roast for 8–10 minutes, until the fish is just cooked through.
Remove from the oven, squeeze over the lemon, then spoon the pan juices over the fish. Serve immediately.
Chef’s Notes
Drying the fish well helps achieve crisp skin.
Baste with the pan juices just before serving for maximum aroma.
Recipe Note
Pepper Option: Spice Zen Tellicherry black pepper may be used for a more traditional flavour.
Serving Context: Serve with simply dressed green leaves and crusty bread to soak up the juices.
Doneness Check: The flesh should flake easily near the bone but remain moist.
