A rich, nutty satay sauce made with Spice Zen Satay Spice Blend, coconut milk and peanut butter. Balanced with gentle sweetness and fresh lime, this sauce is smooth, savoury and deeply comforting. Designed to be served warm or at room temperature, it’s a versatile staple that works just as well as a dipping sauce as it does drizzled over grilled dishes.
Ingredients

1 tbsp Spice Zen Satay Spice Blend

½ cup crunchy peanut butter

1 cup coconut milk
-
2 tbsp kecap manis (dark sweet soy sauce)

1 tsp soy sauce

½ tsp salt, or to taste

2 tbsp fresh lime juice
To Garnish

2 tbsp roasted peanuts, crushed
Substitutions
-
To replace kecap manis, use 2 tbsp soy sauce + 2 tbsp coconut sugar or light brown sugar

Use gluten-free soy sauce if required
Directions
Combine Spice Zen Satay Spice Blend, coconut milk, peanut butter, kecap manis, soy sauce and salt in a saucepan.
Cook over medium heat for about 5 minutes, stirring occasionally, until smooth and slightly thickened.
Stir in lime juice and crushed peanuts and cook for a further minute.
Remove from heat and allow to cool slightly before serving. The sauce will thicken as it stands.
Chef's Notes
The sauce should be spoonable and glossy, not stiff. Add a splash of coconut milk if it thickens too much.
Lime juice is best added at the end to keep the flavour fresh.
