Botanical Name: Myristica fragrans
Mace is the lacy outer covering of nutmeg. In whole blade form it offers a more delicate, perfumed warmth than nutmeg itself, with a subtle peppery lift and a clean, lingering finish.
Whole mace is difficult to find in Australia, especially in certified organic form. Spice Zen Mace blades are selected for colour and fragrance, then quality-checked and packed for purity and freshness. A small amount makes a clear difference to the character of a dish, lending depth to milk-based desserts, clarity to creamy sauces, aromatic lift to rice and slow-cooked pots, and a traditional note in long-matured pickles.
Mace is best used by infusion. Add a blade to warming milk or cream, simmer it in broths and stocks, or cook it with rice, then remove before serving. For a fuller infusion, tear the blade into a few smaller pieces before adding.

- Add whole to rice, pilafs, curries, stews, and braises, then remove before serving
- Add to pickling vinegars and long-matured pickles for a refined aromatic note
- Use sparingly, a small amount goes a long way
