Wattleseed is one of Australia’s most enduring native food ingredients, drawn from select edible species of acacia that thrive across arid and temperate landscapes. For thousands of years, First Nations peoples harvested and prepared wattleseed as a staple food, traditionally grinding it into meal and baking it into dense, nourishing bush breads that travelled well and sustained communities.
When roasted, wattleseed develops a striking aroma reminiscent of freshly ground coffee, dark chocolate and toasted nuts. The variety used here, Acacia victoriae or Elegant Wattle, is valued for its balanced flavour, medium seed size and versatility in both whole and ground form. Its character is warming and rounded rather than bitter, making it especially appealing to those drawn to deep, roasted flavours.
