The humid climate, mineral-rich soils and traditional post-harvest curing methods of Kerala contribute to its remarkable depth. Compared to standard culinary turmeric, Alleppey turmeric offers a richer hue, fuller aroma and more pronounced earthy bitterness, making it especially valued in classical Indian cooking and traditional preparations where turmeric is meant to be seen, tasted and experienced.
