Sichuan Pepper, known in China as huājiāo, comes from the husks of berries belonging to the Zanthoxylum genus. It is not a true pepper but a member of the citrus family, prized for its lively aroma and its distinctive tingling sensation known as “málà”. This natural numbing quality creates a gentle buzz on the palate and adds a vibrant lift to food without the sharp heat of chilli.

How to Use
- Use ¼ teaspoon freshly crushed per 500 g meat, tofu or vegetables
- Lightly toast ½ teaspoon in a dry pan for 30 to 60 seconds to release aroma before grinding
- Add ¼ teaspoon to stir-fries during the final minute of cooking
- Sprinkle a small pinch over noodles or rice just before serving
- Infuse ½ teaspoon in 2 tablespoons warm oil for chilli oil or dressings
- Combine with sea salt to create a fragrant finishing salt
