Each flake is created by crushing the whole dried pepper with skin, seeds and inner veins, resulting in a brilliantly coloured, aromatic chilli with full flavour and satisfying warmth.

Native to Central and South America, chilli travelled across the world through ancient trade routes, becoming essential to the cuisines of India, Africa, Italy, Southeast Asia and Mexico. Ingredients (Serves 2–3):

250 g spaghetti
3 tbsp olive oil
3–4 cloves garlic, thinly sliced
½–1 tsp Red Chilli Flakes (to taste)
Salt, to taste
Fresh parsley, chopped
Lemon zest (optional)

Method

Cook spaghetti until al dente; reserve ¼ cup pasta water.
Warm olive oil in a pan; gently cook garlic until fragrant.
Add Red Chilli Flakes and swirl briefly.
Toss in pasta, adding a splash of reserved water.
Finish with parsley and lemon zest.

Add chilli early for deeper infusion; add late for sharper heat.

2. Chilli–Lemon Roasted Broccoli

Ingredients (Serves 2–3):

2 cups broccoli florets
1½ tbsp olive oil
½–¾ tsp Red Chilli Flakes
1 tbsp lemon juice
Salt to taste

Method

Toss broccoli with oil, salt and chilli flakes.
Roast at 200°C for 15–20 minutes until charred at edges.
Finish with lemon juice.

Chef’s Tips:

Add garlic powder or parmesan for extra umami.
Works beautifully with cauliflower and green beans too.

3. Chilli Oil Drizzle (Creative Pantry Staple)

Ingredients (Makes ~½ cup):

½ cup neutral oil (sunflower or rice bran)
1–2 tsp Red Chilli Flakes
¼–½ tsp dried garlic granules or flakes
Pinch sea salt

Method

Warm oil gently (do not boil).
Stir in Red Chilli Flakes, dried garlic and salt.
Allow to steep for 10–15 minutes off heat.
Leave flakes in or strain to preference.

Chef’s Tips:

Add a pinch of smoked paprika for depth.
Stir in a splash of sesame oil at the end for Asian-style chilli oil.
