This is the essence of Panch Phoran, the celebrated “five-spice” found in the home kitchens of Eastern India, where whole spices are used for fragrance, balance and gentle complexity. This whole-seeds spice blend brings a floral warmth, a gentle sweetness, a delicate herbal lift and a lightly bittersweet edge to simple foods.
Panch Phoran is traditionally used for tempering, a simple but transformative technique where whole spices are bloomed briefly in oil before other ingredients are added. It’s what gives dals their depth, vegetable dishes their brightness, and mustard-based seafood dishes their distinct warmth. Its versatility makes it a favourite in both traditional and modern cooking.

How to Use

Temper in oil: Heat 1–2 tsp in Mustard Oil or Sunflower Oil until the seeds crackle, then add vegetables, dals or fish.
