Mace is the lacy, crimson aril that surrounds the nutmeg kernel, prized across many food cultures for its lighter, more delicate character. Mace offers a gentler warmth and a softer sweetness, making it especially valued where balance and finesse are desired.

The spice opens with a warm, lightly nutty fragrance, followed by gentle spice notes reminiscent of cinnamon and pepper, and finishes with a subtle citrus lift. When cooked, it lends dishes a soft golden hue and a rounded, elegant depth.
