Juniper berries are one of Europe’s oldest and most characterful spice from the Nordic forests to the Alpine valleys for their bright, piney aroma and citrus-pepper lift. Traditionally used in winter stews, game dishes and warming herbal preparations, juniper was once valued as both a kitchen essential and a protective household spice, burned in homes and cellars to purify the air.
Culinarily, juniper lends a vivid freshness that cuts through richness and deepens savoury flavours. It is the signature note behind German sauerkraut, Scandinavian venison stews, French civet, Italian pork roasts, and the botanicals that inspired gin.
