Botanical Name: Syzygium aromaticum
Cloves are the sun-dried flower buds of an evergreen tree native to Indonesia’s Maluku Islands, long celebrated along ancient spice routes for their bold aroma and sweet, warming strength. Cloves bring together sweetness, heat, earthiness and gentle numbing intensity and instantly transforms both sweet and savoury dishes.
Our certified organic whole cloves are freshly ground in small batches at our gluten-free Sydney facility. Grinding cloves fresh ensures a deeper, brighter, more aromatic flavour than pre-ground commercial options, with notes of warm spice, citrus, resin and soft peppery heat. Once ground, the spice is immediately packed in recyclable amber glass jars to protect its volatile aromatics.
Ground cloves appear in everything from Indian garam masala and biryani to Chinese Five Spice, Middle Eastern stews, European baking, festive drinks, Caribbean jerk, pickles, sauces and marinades. A pinch goes a long way especially in warm desserts, fruit dishes, spiced breads, chocolate, chai, curries and slow-cooked meats.

How to Use

Use a pinch (⅛–¼ tsp) in baking, desserts and warm drinks.

Add a small pinch to ¼ tsp per 500g to curries, dals, pulao, biryani and slow-cooked stews.

Stir into barbecue sauces, chutneys, marinades and pickles.

Blend into warm fruit dishes, crumbles, compotes and puddings.

Add depth to chai, mulled wine, hot cider or spiced cocoa.

Add early in cooking to allow the flavour to soften and integrate
