Cinnamon Quills (true verum), also known as True Cinnamon or Ceylon cinnamon, is prized for its delicate aroma, light sweetness and refined character. Unlike stronger cassia varieties, Cinnamomum verum offers a subtle, rounded warmth that enhances dishes, making it the cinnamon of choice in traditional Sri Lankan, South Indian and European kitchens.
Harvested from the inner bark of young cinnamon trees, these slender quills are carefully dried and naturally curl as they mature.
In cooking, true cinnamon integrates seamlessly into curries, rice dishes and slow-simmered sauces, lending warmth without sharpness. In baking and desserts, it adds fragrance and balance to cakes, pastries, fruit compotes and custards.
