Thai Red Curry, known as Gaeng Daeng, is a cornerstone of central Thai cooking. Built on dried red chillies, fresh aromatics and coconut cream, it delivers a confident heat balanced by citrus lift and warm spice depth.
Traditionally, dried red chillies are soaked and pounded with lemongrass, galangal, kaffir lime and coriander root to create a fragrant paste glowing with red intensity. This dry blend captures that same vivid character while offering pantry stability and full control over flavour.
Hand-roasted and stone-ground in small batches at our gluten free Sydney facility and packed fresh into recyclable amber glass jars, it preserves its colour, natural oils and that unmistakable just-milled aroma. This blend with dried red chilli flakes, lemongrass, galangal, fingerroot, kaffir lime, coriander, cumin and black pepper is warm, aromatic and deeply expressive.
It can be stirred directly into coconut cream or transformed into a fresh red curry paste in minutes, allowing you to adjust colour, intensity and heat to preference.

How to Use
• Use 1 tablespoon per 500 g protein or vegetables
• Use ½ tablespoon for milder heat
• Add tomato paste for deeper red colour without increasing spice
• Add fresh red chillies, sambal or chilli paste for traditional heat
• Warm briefly in oil before adding coconut cream
• Stir 1 to 2 teaspoons into soups or broths
• Mix with oil to coat vegetables or tofu before roasting
