Massaman, also known as Mussaman, is one of Thailand’s most storied curries. Its character reflects centuries of cultural exchange, where Persian, Indian and Malay spice traditions met the royal kitchens of southern Thailand. The result is a curry that is gentle in heat yet deeply expressive in flavour.
Massaman is defined by slow-simmered warmth, sweet spice and creamy coconut richness. Cinnamon, cardamom, nutmeg and clove form its aromatic backbone, interwoven with lemongrass, kaffir lime and galangal. The flavour unfolds gradually, building depth as it cooks, creating a sauce that is rounded, fragrant and quietly luxurious.
Traditionally prepared for special gatherings, Massaman is braised slowly with beef, lamb or chicken until tender, often enriched with potatoes that absorb the sauce’s caramelised coconut and spice complexity.
Hand-roasted and stone-ground in small batches at our gluten free Sydney facility using certified organic botanicals, this blend captures the distinctive balance of warm spice, citrus brightness and coconut-ready depth that defines an authentic Massaman. Packed fresh into recyclable amber glass jars, it preserves colour, aroma and just-milled vibrancy.
It can be stirred directly into coconut cream or transformed into a fresh paste in minutes, offering full control over texture, intensity and depth. It also lends warm aromatic structure to coconut soups, slow-cooked stews, roasted vegetables, marinades and noodle bowls.

How to Use
• Use 1 tbsp per 500 g protein or vegetables or 1½ tablespoons for deeper intensity.
• Use ¾ tablespoon and extra coconut cream for kid's friendly milder finish
• Stir 1 teaspoon into coconut soups or broths
• Mix with oil to coat vegetables or tofu before roasting
• Add a pinch to tamarind-lime dressings or warm grain bowls
