Known as Gaeng Kiew Wan, or “sweet green curry,” the name refers not to sugar but to the lush, vivid character created by green chillies, fresh herbs and coconut cream. It is traditionally the hottest of the Thai curries, alive with heat and fragrance.
Classic green curry begins as a hand-pounded paste, where chillies, lemongrass, galangal and kaffir lime are crushed together to release their oils and perfume. Spice Zen’s certified organic Thai Green Curry Spice Blend captures that intensity in a refined dry format. It delivers the brightness and fire of the original while offering pantry ease and precise control.
Hand-roasted and stone-ground in small batches at our gluten free Sydney facility, this blend brings together Thai hot chilli, lemongrass root and leaf, kaffir lime, galangal, fingerroot, coriander seed and leaf, white pepper and turmeric. Many of these botanicals are rarely used outside traditional Thai kitchens. Together they recreate the sharp citrus lift, layered heat and green vibrancy of an authentic street-style curry.
To create a traditional paste, combine the blend with fresh green chillies, shallots and shrimp paste, or soy sauce for a vegan version. Simmer gently in coconut cream with seafood, chicken or vegetables and allow the sauce to thicken until glossy and aromatic.
Beyond curry, this blend brings electric Thai character to soups, noodles, stir-fries, salads and modern fusion dishes. Even a small amount carries remarkable intensity.

How to Use
• Use 1 tablespoon per 500 g protein or vegetables for classic heat
• Use ½ tablespoon and coconut cream for a milder curry
• Add 1 to 2 teaspoons to coconut soups or broths
• Warm 1 teaspoon in oil before stir-fries
• Coat vegetables or tofu with oil and 1 teaspoon before roasting or air frying
• Stir a pinch into dressings for Thai chilli-lime lift
