1. Madras Curry Base

Ingredients (Serves 4)

• 500 g chicken, lamb, beef, seafood or mixed vegetables

• 1 tablespoon Spice Zen Madras Curry Powder Hot

• 2 tablespoons oil

• 1 medium onion, finely sliced

• 2 teaspoons grated ginger

• 2 cloves garlic, crushed

• 2 medium tomatoes, chopped or 1 cup crushed tomatoes

• 400 ml coconut cream or 1 cup yoghurt

• ½ to 1 cup water

• Salt to taste

• Lime wedges to serve

Method

• Heat oil in a pan and cook onion until soft

• Add ginger and garlic and cook briefly until fragrant

• Stir in the spice blend and cook for 30 to 60 seconds

• Add tomatoes and cook until thickened

• Add protein or vegetables and coat well

• Pour in coconut cream or yoghurt with water and simmer until cooked through

• Season to taste and serve with lime

2. Vindaloo Curry

Ingredients (Serves 4)

• 500 g pork, chicken, beef, lamb, mushrooms or jackfruit

• 1 tablespoon Spice Zen Vindaloo Spice Blend

• 2 tablespoons oil

• 1 medium onion, chopped

• 2 teaspoons grated ginger

• 2 cloves garlic, crushed

• 2 tablespoons vinegar

• 1 cup crushed tomatoes

• 1 to 1½ cups water or stock

• Salt to taste

Method

• Heat oil and cook onion until golden

• Add ginger and garlic and cook briefly

• Stir in spice blend and cook for 30 to 60 seconds

• Add vinegar and tomatoes and stir well

• Add protein or vegetables and coat

• Add water or stock and simmer until tender

• Season to taste and reduce slightly for a deeper finish

3. Garam Masala

Ingredients (Serves 4)

• 1 cooked curry, dal or stew

• ½ to 1 teaspoon Spice Zen Garam Masala

• 1 tablespoon ghee or butter, optional

• Coriander leaves to finish, optional

Method

• Turn off heat once the dish is cooked

• Stir through garam masala

• Rest for 2 minutes, then serve

4. Sambar

Ingredients (Serves 4)

• 1 cup toor dal or red lentils

• 4 cups water

• 2 cups mixed vegetables, chopped

• 1 to 1½ tablespoons Spice Zen Sambar Spice Blend

• 2 tablespoons oil or ghee

• ½ teaspoon mustard seeds

• 8 to 10 curry leaves

• 1 tablespoon tamarind paste

• Salt to taste

Method

• Cook lentils in water until soft, then whisk lightly

• Add vegetables and simmer until tender

• Stir in spice blend and tamarind and simmer 5 minutes

• Heat oil in a small pan, add mustard seeds and curry leaves and cook until crackling

• Pour tempering over the sambar, season and serve
