1. Classic Italian Bolognese Sauce

Ingredients (Serves 4)

2 tbsp Spice Zen Organic Cold-Pressed Sunflower Oil
1 onion, finely chopped
2 cloves garlic, minced
500 g beef mince or plant-based mince
1 tbsp Spice Zen Bolognese Seasoning (adjust to taste)
1 cup tomato passata
½ cup water or stock
Salt, to taste

Method

Warm oil in a heavy saucepan over medium heat.
Add onion and cook for 4 to 5 minutes until soft and translucent.
Add garlic and mince, breaking up gently until lightly browned.
Stir in the bolognese seasoning and cook for 1 minute until aromatic.
Add passata and water or stock, reduce heat and simmer gently for 25 to 30 minutes.
Season to taste and serve over pasta.

Chef’s Tip: Longer, slower simmering softens the herbs and deepens the sauce.

2. Lentil and Mushroom Ragù

Ingredients (Serves 4)

2 tbsp Spice Zen Organic Cold-Pressed Sunflower Oil
1 onion, diced
200 g mushrooms, finely chopped
1 cup cooked brown lentils
1 tbsp Spice Zen Bolognese Seasoning
1 cup crushed tomatoes
½ cup water
Salt, to taste

Method

Warm oil in a saucepan and cook onion until soft.
Add mushrooms and cook until moisture evaporates.
Stir in seasoning and lentils.
Add tomatoes and water, then simmer gently for 20 minutes.
Season and spoon over pasta or roasted vegetables.

Chef’s Tip: A splash of pasta cooking water adds silkiness when tossing with pasta.

3. Bolognese Stuffed Vegetables

Ingredients (Serves 3–4)

4 large capsicums or zucchini, halved and seeded
1½ cups cooked lentil or mince bolognese sauce
1 tbsp olive oil
Salt, to taste

Method

Brush vegetables lightly with olive oil and season.
Fill with prepared bolognese mixture.
Bake at 180°C for 30 to 35 minutes until tender and lightly golden.

Chef’s Tip: Finish with fresh herbs or a light nut oil drizzle before serving.
