A slow-cooked pumpkin soup with layered warmth and gentle spice, made with butternut pumpkin, apple and aromatic herbs. The Spice Zen All Purpose Spice Blend or Chilli-Free Curry Powder brings savoury depth without overpowering, while slow cooking allows the flavours to soften and round out naturally. Comforting, balanced and , this soup is well suited to cooler days and simple meals.
Ingredients
Soup Base

1.2–1.4 kg butternut pumpkin (about 1 kg peeled flesh), chopped

2 green apples, peeled and chopped

2 carrots, peeled and chopped

1 brown onion, chopped

1 fresh red chilli, halved (optional)

1 tsp Spice Zen All Purpose Spice Blend – Mild

1 Spice Zen Cinnamon Quill (optional)

2 sprigs fresh rosemary or 1 tsp Spice Zen Rosemary dried

Salt, to taste

250 ml vegetable stock

Water, as needed to just cover vegetables
To Finish

½ tsp Spice Zen Stoneground Cracked Black Pepper

½ tsp Spice Zen Red Chilli Flakes (optional)

Pepita seeds, to garnish

1 tbsp cream or lactose-free cream (optional)
Directions
Place the pumpkin, apples, carrots, onion and optional fresh chilli into the slow cooker.
Add the chosen spice blend, cinnamon quill, rosemary, cracked black pepper and salt.
Pour in the vegetable stock, then add enough water to just cover the vegetables.
Cover and cook on medium for 4–6 hours, until all vegetables are very tender.
Remove and discard the rosemary sprigs and cinnamon quill. Blend the soup until smooth.
Taste and adjust seasoning if needed.
Serve warm, garnished with pepita seeds, optional chilli flakes and a swirl of cream if using.
Chef’s Notes
Avoid adding excess liquid, as slow cookers release moisture during cooking.
For a milder soup, omit the fresh chilli and rely on garnish for heat.
Recipe Note
No Slow Cooker: Simmer all ingredients gently in a covered pot on the stovetop for 30–35 minutes, until very tender, then blend.
Dairy-Free Option: Omit cream or use a dairy-free alternative.
