4 fish fillets (about 625 g total), white fish or salmon

4 teaspoons Spice Zen Sunflower Oil (divided)

2 teaspoons Spice Zen Spicy Fish Rub

¼ teaspoon sea salt (adjust to taste)

Directions
Preheat the oven to 200°C. Lightly oil a shallow roasting tray.
Place the fish fillets in the tray. Drizzle with the oil, sprinkle over the Spicy Fish Rub and sea salt, then gently rub to coat both sides evenly.
Roast for 9–10 minutes, or until the fish is just cooked through and flakes easily when pressed.
Remove from the oven and serve immediately with lemon slices and salad.

Avoid overcooking — fish should flake easily but remain moist at the centre.
