This classic roast chicken is seasoned simply with Spice Zen Greek Lamb Blend, allowing lemon peel, oregano and warming herbs to perfume the bird as it roasts. The blend forms a fragrant crust while the chicken bastes naturally in its own juices, keeping the meat tender and full of flavour. Comforting and generous, this is an effortless centrepiece suited to family meals and relaxed gatherings.

Preheat the oven to 200°C fan-forced.
Pat the chicken dry inside and out. Place it breast-side down on a clean work surface.
In a small bowl, mix the sunflower oil, Greek Lamb Blend and sea salt. Rub the mixture all over the chicken, massaging it well into the skin and cavity.
Scatter the crushed garlic and rosemary into a roasting tray. Place the chicken on top. Tuck the lemon halves into the cavity.
Roast for 1 hour 10–15 minutes, turning once halfway through, until the skin is golden and the juices run clear. The internal temperature should reach 75°C in the thickest part of the thigh.
Remove from the oven and rest for 15 minutes before carving.
Carve and serve on a platter, spooning over the pan juices and finishing with fresh parsley.

Dry the chicken well before seasoning to help the skin roast crisp.
Resting is essential — it allows the juices to redistribute for tender meat.
