Botanical Name: Cinnamomum cassia
Spice Zen’s certified organic Cinnamon Bark (Cassia) is sourced from mature Cinnamomum cassia trees grown in India and sun-dried to preserve their rich essential oils. Cassia is the bold, full-flavoured cinnamon most widely used around the world, it is deeper in colour, stronger in aroma and sweeter-spicier than delicate Ceylon cinnamon.
Cassia is also known as “Baker’s Cinnamon” in Western kitchens as its robust flavour withstands baking temperatures and long cooking times, making it ideal for breads, cookies, cakes and granola.
Cassia bark forms thick, single-layer pieces (not tightly curled quills like Ceylon cinnamon).
Cassia naturally contains coumarin, a compound found in many aromatic plants. It has been used safely for centuries in small culinary amounts across Indian, Asian and Western cooking in curries, rice dishes, baking, sweet infusions and slow-cooked broths.
