Botanical Name: Trigonella foenum-graecum
Deeply aromatic, gently bitter and distinctive, fenugreek seeds are a cornerstone of Indian, Middle Eastern and North African cooking. When raw, they carry a firm bitterness. When toasted or simmered slowly, they transform into a warm, nutty sweetness with maple-like undertones and savoury depth.
Used sparingly and with care, fenugreek seeds build complexity in dals, pickles, curries and spice tempering. Their flavour unfolds gradually, rewarding slow cooking and traditional techniques.

How to Use
Lightly toast before grinding, or temper whole in hot oil to soften bitterness.
- Use ¼-½ teaspoon whole seeds to temper oil for dals and curries (serves 4).
- Add ½ teaspoon per 600 g vegetables, lentils or meat in slow-cooked dishes.
- Dry roast and grind for homemade curry powders or spice blends.
- Soak and simmer in pickling brines for depth and gentle bitterness.
Fenugreek seeds are potent. Start small and build gradually.
