Botanical name: Cardamomum amomum
Black Cardamom, also known as Brown Cardamom, is bold, resinous and unmistakably smoky. Unlike green cardamom, these large, dark pods are traditionally dried over open wood fires, developing their signature earthy sweetness and camphor-like warmth.
Native to India and the Eastern Himalayas, black cardamom has long been prized in Indian, Chinese and Middle Eastern cuisines for its structural depth. It anchors slow-cooked curries, braises and rice dishes with a lingering smokiness that feels grounding and complex.
Each pod contains tiny aromatic seeds that release their character when lightly crushed or warmed in oil. Used whole, it gently perfumes a dish; cracked open, it deepens and intensifies the flavour. A little goes a long way.
