A vibrant Southern-style rice dish inspired by Louisiana cooking, this vegetarian jambalaya brings together vegetables, rice and black beans with Spice Zen Cajun Seasoning. Savoury, gently spiced and satisfying, it’s a one-pot meal that’s easy to cook and well suited to weeknight dinners or sharing.

1 large onion, sliced

1 red capsicum, sliced

2 celery stalks, sliced

1 zucchini, sliced
Rice & Protein

1¼ cups long-grain white rice

400 g canned black beans, drained and rinsed
Seasoning & Base

2 tbsp olive oil
-
1 tbsp Spice Zen Cajun Seasoning

4 tbsp tomato passata
-
1½ cups water or vegetable stock

½ tsp salt, or to taste
Garnish

Fresh flat-leaf parsley, chopped

Lemon wedges, to serve (optional)
Directions
Heat olive oil in a large pan over medium heat. Add onion, celery, zucchini and capsicum and cook for about 5 minutes, until slightly softened.
Add Spice Zen Cajun Seasoning and cook for 1–2 minutes until aromatic.
Stir in the rice, coating it well with the vegetables and spices.
Add tomato passata, water or stock and salt. Bring to a gentle boil.
Reduce heat to low, cover and simmer for about 10 minutes, or until the rice is just tender.
Stir in the black beans, then remove from heat. Keep covered and let rest for 5 minutes.
Fluff gently with a fork and garnish with fresh parsley. Serve with lemon wedges if desired.
Chef's Notes
Resting the jambalaya allows the rice to finish steaming and absorb flavour.
Adjust the Cajun seasoning slightly up or down depending on heat preference.
This dish should be moist but not soupy.

Corn, green beans or diced pumpkin can be added alongside the zucchini.
