A rich and comforting Thai Massaman curry made with tender chicken, coconut cream and warming Spice Zen Massaman Curry Spice Blend. Gently simmered until rich and aromatic, this curry delivers the depth and balance of a traditional Massaman without the need for multiple fresh aromatics. Comforting yet refined, it is easy to prepare and well suited to everyday meals and effortless home cooking.

500 g chicken leg and thigh fillets, diced

3 chat potatoes, diced

2 medium onions, pureed

2 cloves garlic, smashed
Curry Base

2 tbsp sunflower oil
-
1–1½ tbsp Spice Zen Massaman Curry Spice Blend

400 ml coconut cream
-
½ cup water or chicken stock
-
1 tbsp coconut sugar
-
1 tbsp fish sauce (optional)

Salt, to taste
To Finish

1 tsp lime juice (optional)

Fried shallots, for garnish

¼ cup unsalted roasted peanuts, for garnish (optional)
Directions
Heat sunflower oil in a pot over medium heat. Add chicken and cook briefly until lightly browned. Remove and set aside.
In the same pot, add pureed onion and cook until lightly caramelised. Add garlic and cook briefly until aromatic.
Add Spice Zen Massaman Curry Spice Blend and stir until fragrant. Pour in coconut cream and bring to a gentle boil. Reduce heat and simmer until the coconut oil begins to separate.
Add chicken, potatoes, water or stock, coconut sugar, fish sauce (if using) and salt. Stir well, cover and simmer gently for 15 minutes until chicken and potatoes are tender and the curry has thickened.
Taste and adjust seasoning. Add lime juice if needed.
Garnish with fried shallots and peanuts if using. Serve warm with steamed jasmine rice.
Chef’s Notes
Allow the curry to rest for 10 minutes before serving to let flavours settle.
Adjust richness with a splash of warm water if the curry thickens too much on standing.
