A classic Kashmiri-style curry where lamb or goat is simmered with Spice Zen Rogan Josh Spice Blend, yoghurt and aromatics. Warm, gently spiced and savoury, this Rogan Josh has a balanced heat and a smooth, spoonable sauce. Traditionally enjoyed with naan or rice, this is a timeless dish suited to relaxed cooking and sharing.

Marination

500 g lamb shoulder or goat meat, diced

1 tsp Spice Zen Rogan Josh Spice Blend

½ cup plain yoghurt
(or lactose-free yoghurt)

1 tsp salt
Rogan Josh Sauce

2 tbsp ghee
-
1 tbsp Spice Zen Sunflower Oil

1 tbsp Spice Zen Rogan Josh Spice Blend

2 medium onions, pureed
-
1 tsp ginger paste
-
1 tsp garlic paste
-
½ cup tomato puree
-
½ cup water (plus extra as needed)

Salt, to taste

Directions
In a bowl, combine yoghurt, salt and 1 teaspoon Spice Zen Rogan Josh Spice Blend. Add the lamb or goat and mix well. Set aside to marinate for at least 15 minutes.
Heat ghee and Spice Zen Sunflower Oil in a heavy-based pan over medium heat. Add 1 tablespoon Spice Zen Rogan Josh Spice Blend and warm briefly until aromatic.
Add onion purée, ginger and garlic and cook for 2–3 minutes until softened.
Add tomato puree, salt and water. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes.
In a separate pan, lightly brown the marinated meat in batches to seal and develop flavour.
Add the browned meat and any resting juices to the sauce. Cover and simmer on low heat for about 60 minutes, adding small amounts of water as needed to maintain a spoonable consistency.
Simmer uncovered for a few minutes if needed, then remove from heat and garnish with fresh coriander. Serve hot with naan or steamed rice.

Lactose-Free Option
Use lactose-free yoghurt in the marinade and replace ghee with Spice Zen Sunflower Oil.
Vegetarian Adaptation
For a vegetarian version, replace meat with 400 g mushrooms (or a mix of mushrooms and firm tofu). Simmer for 20–25 minutes until the sauce thickens and coats the vegetables.
Consistency Guide
Rogan Josh should be medium-bodied — thick enough to coat the meat, but loose enough to spoon easily.
