A festive mulled wine inspired by Northern European traditions, gently infused with Spice Zen Mulled Wine Spice Blend. The spices are packed in a natural muslin cotton bag, making this recipe wonderfully simple — just steep, remove and serve. Slowly warmed with citrus and subtle sweetness, this mulled wine fills the kitchen with aroma and delivers a rich, balanced cup that suits celebratory gatherings, whether served warm on cooler evenings or chilled over ice in warmer weather.
Ingredients
Spiced Base

350 ml freshly boiled water

2–3 tbsp raw sugar, coconut sugar or maple syrup, to taste

1 muslin bag Spice Zen Mulled Wine Spice Blend
Wine & Fortifier

750 ml red wine
-
100–150 ml brandy, dark rum or orange liqueur (optional)
To Serve

Orange slices
-
Whole star anise
-
Cinnamon quills (optional)

Raisins or sultanas (optional)
Directions
Place freshly boiled water and sweetener into a large non-reactive pot and stir until fully dissolved. Add the Spice Zen Mulled Wine Spice Blend (in its muslin bag).
Bring to a gentle boil and simmer for 5 minutes. Remove from heat and allow to steep overnight with the spice bag left in the liquid. If short on time, simmer for 15 minutes and steep for at least 2–3 hours.
Remove the spice bag. Add red wine and the optional fortifier.
Warm gently over medium heat for about 10 minutes. Do not boil.
Serve warm with orange slices, star anise and optional garnishes.
Chef’s Notes
Once wine is added, keep the heat gentle to preserve aroma and balance.
Taste before adding any fortifier; the spice blend is designed to be full and rounded on its own.
Recipe Note
Cold Brew Option
Dissolve the sweetener in freshly boiled water, then allow it to cool completely. Combine the cooled syrup with wine, optional fortifier and the spice bag in a covered jug. Refrigerate for 12–24 hours. Remove the spice bag before serving. Serve chilled over ice or gently warm if preferred.
Serving Style
In warmer weather, allow the mulled wine to cool after heating and serve chilled over ice with citrus slices for a lighter, summer-friendly serve.
