A versatile Indian-style potato dish cooked with popping black mustard seeds and gentle Spice Zen Curry spices. Crisp on the outside and soft within, these golden potatoes are deeply comforting and full of flavour, making them just as enjoyable on their own as they are alongside flatbreads, soups or simple meals. A quietly satisfying dish that feels like true everyday soul food.
Ingredients
Potatoes

1.25 kg potatoes, washed, peeled and cut into cubes
Spice Base

2–3 tbsp Spice Zen Sunflower Oil

1½ tsp Spice Zen black Mustard seeds

1 tbsp Spice Zen Curry Powder – Medium

or
1 tbsp Spice Zen Chilli-Free Curry Powder

¼ tsp Spice Zen Turmeric Powder (optional)

1 medium red onion, finely chopped (optional)
-
1 tbsp water
-
1 tsp salt
To Finish & Garnish
-
1 tsp Spice Zen dried mango powder (amchur) (optional)

Fresh coriander, roughly chopped

Fresh fennel, julienned

Tomatoes, sliced
Directions
Heat a large frying pan over medium heat and add the oil. Add the black mustard seeds, cover the pan and allow them to pop.
Add the curry powder of choice (and turmeric, if using) and stir briefly until aromatic.
Add the onion, if using, and cook until lightly caramelised.
Add the potatoes, salt and water. Stir well to coat the potatoes evenly.
Reduce heat to medium-low, cover the pan and cook for 15–20 minutes, turning the potatoes every 8–10 minutes, until tender.
Add the dried mango powder, if using, and cook uncovered for a further 5 minutes until the potatoes turn golden. If a crust forms at the base of the pan, gently scrape and fold it through for added texture.
Transfer to a serving dish and garnish with fresh coriander, fennel and tomatoes.
Chef’s Notes
Covering the pan helps the potatoes steam and soften before crisping.
Use chilli-free curry powder for a nightshade-free, gentle version suitable for all ages.
Recipe Note
This dish can be made using either Spice Zen Curry Powder – Medium or Spice Zen Chilli-Free Curry Powder. The chilli-free version contains no chilli or nightshades and offers a gentle, family-friendly flavour.
