A classic chilli con carne made with free-range minced chicken, Spice Zen Tex Mex Spice Blend, tomatoes and mixed beans. Slowly simmered to develop depth and body, this one-pot dish delivers a rich, savoury sauce with gentle warmth and a satisfying, spoon-able finish. Well suited to family meals, casual gatherings or make-ahead cooking.
Ingredients

500 g free-range minced chicken

1 red capsicum, chopped

400 g Mexican mixed beans, drained and rinsed
Sauce Base

2 tbsp Spice Zen Sunflower Oil

1 large onion, finely chopped

2 garlic cloves, peeled, smashed and chopped

1–1½ tbsp Spice Zen Tex Mex Spice Blend

400 g chopped tomatoes (canned or fresh)

2 tbsp tomato purée

1½ cups chicken stock

½ tsp salt, or to taste
To Finish

Fresh coriander, chopped, to garnish (optional)

Red Chilli- whole or sliced (optional)
Directions
Heat Spice Zen Sunflower Oil in a pan over medium heat. Add the onion and cook until slightly translucent.
Add the garlic and Spice Zen Tex Mex Spice Blend and sauté for 2–3 minutes until fragrant.
Add the red capsicum, then increase the heat and add the minced chicken. Cook for about 5 minutes, breaking it up well, until no pink remains.

Stir in the Mexican beans and gently simmer for another 5 minutes. Add a little more stock or water if needed. Remove from heat and garnish with fresh coriander before serving.
Chef’s Notes
Cook the minced chicken over higher heat initially to allow excess moisture to evaporate and keep the sauce rich rather than watery.
Stir gently once the beans are added to maintain their shape and texture.
Recipe Note
Resting the Chilli
Resting the chilli for 10 minutes before serving allows the sauce to settle and flavours to come together naturally. This dish is also often enjoyed the next day as flavours deepen.
Multi-Function Cooker Option
Prepare the sauce base using the sauté function. Add chicken, tomatoes, purée, stock and salt, then pressure cook on high for 8 minutes. Allow natural pressure release for 10 minutes, stir in beans, and use sauté mode briefly if further thickening is needed.
Make-Ahead & Meal Prep
This chilli keeps well refrigerated for up to 3 days and reheats gently on the stovetop or in the microwave. Add a small splash of water or stock when reheating if required.
Serving Suggestions
Traditionally served with rice, this chilli can also be enjoyed with avocado salad, tacos, burritos or nachos depending on the occasion.
