Perfectly caramelised figs and oranges are paired with crisp fennel and finished with a light aniseed dressing for a salad that balances sweetness, acidity and gentle spice. Spice Zen Aniseed brings warmth and aroma, while Spice Zen Almond oil lends a soft, rounded finish. Elegant and composed, this dish works beautifully as a refined side or starter.
Ingredients

16 fresh figs, halved lengthways (about 500 g)

4 medium oranges, peeled and sliced into 1 cm rounds (about 750 g)

1 small fennel bulb, very thinly sliced

Fennel fronds, to garnish
Caramel

80 g caster sugar
Dressing
-
1½ tablespoons lemon juice
-
1 teaspoon Spice Zen Aniseed, lightly toasted and crushed

1 small garlic clove, finely crushed

Cold pressed Almond Oil
-
Coarse sea salt, to taste

Spice Zen Stoneground Cracked Black Pepper, to taste
Directions
Place a large frying pan over medium heat and add the caster sugar, allowing it to melt and turn a light golden caramel.
Add the figs cut side down in a single layer and cook for about 2 minutes until just softened and lightly caramelised, then turn briefly and remove to a plate.
Add the orange slices to the same caramel and cook for about 1 minute per side, then remove and set aside with the figs.
Take the pan off the heat and carefully whisk in the lemon juice, crushed aniseed, garlic, salt and cracked black pepper.
Slowly whisk in the Almond oil until the dressing is smooth and glossy.
Arrange the figs, oranges and fennel on a platter, drizzle over the dressing and any caramel juices, and garnish with fennel fronds.
Chef’s Notes
Keep the caramel a light golden colour to avoid bitterness.
Slice the fennel very finely for a clean, crisp contrast to the soft fruit.
Recipe Note
Optional Native Accent: Add a small pinch of Spice Zen Aussie Bush Spice Blend to the dressing for gentle warmth.
